3 medium Zucchini
1 Onion (diced)
1 C Mushrooms (fresh, sliced in half)
½ C Sunflower seeds (optional)
1 tsp Garlic powder
1 tsp Oregano
¼ tsp Pepper
½ tsp Salt
1½ can Tomatoes (or sauce or juice)
1 C Provolone cheese (grated)
3 T Parmesan cheese (grated)

Directions:
Directions:
Slice zucchini into ½" circles and arrange on oiled baking dish to which about ¼C water has been added. Put layers of onion, sunflower seed, mushrooms on top of zucchini, followed by spices, tomatoes and cheeses. Bake covered at 350º for about 20 minutes or until zucchini is tender.

Microwave: bake on normal, cook for 9 minutes (rotate 3 times) or until tender.
Use larger baking dish.

* Scorched vegetables? Set the pot in a pan of cold water and let stand for 15-30 minutes. Do not scrape the bottom of the pan. No one will know the vegetables have been scorched.
