1¼ lbs. ground pork
2 green onions, sliced
4 tbsp. soy sauce
1 thumb ginger, peeled and minced
2 cloves garlic, minced
1 tsp. sugar
3 tbsp. white vinegar
2 tbsp. sesame oil
vegetable oil for frying
2 packages of wontons

In a small bowl, combine sugar, 2½ tbsp. soy sauce, white vinegar, half the ginger, half the garlic, and sesame oil. Set aside. In a medium bowl, combine pork, green onions, 4 tsp. soy sauce, remaining ginger, remaining garlic, salt, and pepper. Fill a small bowl with water. Place wonton wrappers on work surface and spoon 1 heaping tsp. pork mixture into center of each wrapper. Using your fingertip, wet edges of wrappers with water, then fold wrappers over filling, press to seal edges (triangle shape). Repeat process until you have 6-8 dumplings per person. Heat ½ inch of vegetable oil in a large pot over med/high heat. Working in batches, carefully add dumplings and fry until golden, 1-2 minutes per side. Remove using slotted spoon, drain on paper towels. Serve with dipping sauce.
