Ingredients: 6 eggs, one whole and 5 separated 1/2 cup plus 4 Tablespoons sugar 6 Tablespoons flour 1 teaspoon vanilla

Directions:In a bowl, mix whole egg and all yolks and the half cup sugar and vanilla until thick and pale. In another bowl, beat egg whites until foamy and add the 4 Tablespoons of sugar, one at a time. Beat until stiff but not dry. Fold beaten whites into yolk mixture. Sift flour and fold in.
On a 10x15 sheet pan greased with vegetable oil, smooth out the batter and cook at 350 until done, about 20-25 minutes. Cool before cutting. |

Ingredients: 1 pound Mascarpone Cheese 6 Tablespoons sugar 3 1/2 Tablespoons Marsala 3 Tablespoons Grand Marnier 3 Tablespoons Amaretto 2 cups Heavy Cream 1/4 cup powdered sugar 1 cup strong coffee 4 ounces bittersweet chocolate 60%, chopped fine

Directions:In a bowl, stir together the cheese and sugar, just until incorporated, If Mascarapone is overbeaten, it will turn into cottage cheese. Then stir in the liquors.
In another bowl, whip the cream and add the powdered sugar. Fold half of the whipped cream mixture into the cheese mixture and chill until ready to use. Chill other half of the whipped cream mixture for the topping.
TO ASSEMBLE: Cut the sponge cake in half. In a serving dish, place half of the sponge cake, cut to fit the dish and brush with 1/2 cup of strong coffee, Spread 1/2 of the cheese mixture onto coffee soaked cake. Top with half of the chopped chocolate. Add another layer of cake, soak with rest of coffee, top with remaining cheese mixture.
CHILL for at least 6 hours before serving. Pipe out the remaining whipped cream and garnish with the remaining chocolate. |
