1 - 2lb bag Frozen Hash Browns (shredded works best)
1 stick Butter - melted
2 cans Cream soup (chicken, mushroom or celery)
1 small Onion, finely chopped
1 c. Sour Cream
1 ½ tsp. Salt
½ tsp. Pepper
1 tbsp. Parsley
1 ½ c. Cheddar cheese - shredded

Optional ingredients:
Bacon Bits
Ham
Green Chilis

Directions:
Directions:
Preheat oven to 350º

Mix butter, soup and sour cream in medium bowl.

Add onions and parsley and 1 cup cheddar cheese. Pour over frozen hash browns and mix well.

When mixed well, pour into large baking dish, cover with 1/2 c. cheddar cheese and let sit over night in refrigerator.

Bake for 45-60 minutes. Check in 30 minutes to ensure top isn't browning to quickly.
