Thoroughly wash escarole
My mom would soak it in the sink
Boil in enough water for it to be soupy, with salt and pepper, till tender
Add some olive oil and salt/pepper to taste
Boil macaroni (spaghetti,linguini) my fav. Strain
Add some water from the escarole to the macaroni, so it doesn't stick
Add together the escarole and macaroni in your dish, add cheese.
Remember the chucks of Italian cheese our grandmother and our mothers use to put in it? Yumm!
