• 2 lbs ground beef or turkey
• 1 can of rotel tomatoes drained
• 1 can of chili tomatoes
• 2 cans of black or pinto beans drained
• 1 can of sweet corn
• 2 packages Mexican style cornbread per directions or Jiffy’s if you like SWEET
• 2 cups cheddar shredded
******Best if using a cast iron skillet ********

Directions:
1. Start with cooking the ground beef in a large sauce pan, season as desired, add drained Rotel tomatoes and drained Ranch style beans. Simmer 10 minutes. Mix the two packages of Mexican style cornbread per directions.
2. Add a can of cream style corn to cornbread mix, toss in 1 cup shredded cheese and stir.
3. Grease skillet and add cornbread mix on top of meat mix- cook until golden brown, crispy edges.
4. Bake at 350 for about 20-30 minutes or until cornbread is golden brown.
