4 tbsp. butter
½ large onion, finely chopped
3 cloves garlic, minced
4 tbsp. all-purpose flour
1 tsp. chopped fresh sage
1 tsp. chopped fresh rosemary
1 tsp. chopped fresh thyme
2 to 3 c. low-sodium chicken broth
Kosher salt
Freshly ground black pepper

Directions:
Directions:
In a medium saucepan over medium heat, melt butter. Add onion and cook until soft, 5 minutes, then stir in garlic and cook until fragrant, 1 minute more. Stir in flour and herbs and cook for 1 minute, then gradually whisk in 2 cups broth. Bring mixture to a boil, then reduce heat slightly and simmer until thickened, about 5 minutes. If the gravy is too thick, add more broth.
