1 large onion, chopped
2 celery stalks, chopped
½ green onion, chopped
½ green bell pepper, chopped
3 tsp minced garlic
¼ cup flour
1 cup vegetable broth
1 (14½ oz) can petite diced tomatoes
½ tsp dried thyme leaves
⅛ tsp ground cayenne pepper (NO MORE FOR ME)
¼ tsp salt
½ tsp smoked paprika
½ oregano
6 drops hot sauce
1 package Beyond Meat Spicy Sausage, cut in small circles
1 cup vegan shrimp (can purchase at Asian Grocery) (optional)
4 cups hot cooked rice

Directions:
Directions:
In a large frying pan, water sauté onion, celery, bell pepper, and garlic until they are soft and tender, about 8 minutes.

Remove from pan and saute the Beyond Sausage until slightly brown.

Add vegetables and flour and stir until the flour is heated through, about 1 minute. Gradually pour in the both in increments, stirring after each addition, until the mixture has thickened. Add the tomatoes, thyme, cayenne, salt, paprika, oregano, and hot sauce. Reduce the heat to medium, and cover and simmer the mixture for about 10 minutes, stirring occasionally.

Stir in the shrimp(if using) and cook the étouffée until the shrimp is hot, about 3-5 minutes. Serve over hot rice.
