4-5 lbs pork spare ribs

Rib rub:
3/4 cup packed dark brown sugar (or 1/2 cup if you prefer a more savory rub)
2 tablespoons kosher salt
2 tablespoons onion powder
2 tablespoons smoked paprika
1 tablespoon dry mustard
1 tablespoon granulated garlic
1 tablespoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon allspice

Directions:

Preheat oven to 325 degrees.

Make rib rub and rub it onto rack of ribs until the mixture no longer sticks.

Place ribs in the pan meat side up and cover with foil. Cook in oven for 4 hours, check at hour 3.
