5 lbs. Apples, peeled and sliced(about 13 cups)
¾ cup Packed Light Brown Sugar
⅔ cup Unsweetened Apple Juice
2 tsp. Ground Cinnamon
1 tsp.Pumpkin Pie Spice
1 tbsp. Vanilla Extract

In a large crockpot, combine the 1rst. 5 ingredients. Cook on low for 6-8 hours. Until apples are soft. Add vanilla extract, stir to break up apples. Serve warm or cold. You can freeze.

You can add different slices, for different flavor profiles. I add a lot more spices than called for, cause I like the stronger season forward taste.
