2 cups + 1 tbsp Water
½ cup Quick-Cook Grits
1 cup Cheddar Cheese, shredded
¼ cup Butter, cubed
2 tbsp Prepared Pesto
½ tsp Salt
¼ tsp Pepper
½ lbs. Bulk Pork Sausage
¼ cup Red Bell Pepper, finely chopped
7 large Eggs
1 box(17.3 oz) Frozen Puff Pastry, thawed

Preheat oven to 375º. In a small saucepan boil 2 cups of water. Slowly stir in grits. Reduce to medium heat. Stir in cheese, butter, pesto, and ½ the salt and pepper. In a large skillet, cook sausage and the red pepper. Drain the grease. Whisk 6 eggs and salt & pepper together. Add to the sausage and cook till eggs are cooked. On a 12 x 10" sheet of parchment , unfold each pastry sheet. Leaving a ½ inch border spread out grits, spoon the sausage mixture over the grits. Fold pastries over mixture to enclose. Press with fork to seal. Transfer to Bake Sheet. Whisk 1 egg and 1 tbsp of water together, and brush over pastry. Bake until golden brown. Cut into 4 pieces.
