1 tbsp. Olive Oil
½ cup Yellow Onion, finely chopped
1 cup Fresh Corn
½ tsp. Fresh Parsley, minced
1 tsp Garlic Salt
Dash of Pepper
1 box frz. Puff Pastry, thawed
1 large Egg
1 tbsp. Water
¾ cup Cherry Tomatoes, quartered
½ cup Goat Cheese, crumbled
½ cup Provolone Cheese, shredded
2 tbsp. Fresh Basil, minced

Preheat oven to 375º. Caramelized the onions in oil. Stir in corn, garlic, parsley, and pepper. Cook until corn is tender (about 2 minutes). Unfold pastry, using a floured 4" round cookie cutter, cut 4 circles in each sheet. Place on a parchment lined baking sheet. Whisk egg and water, then brush it over pastry. Spoon 2 tbsp. of corn mixture into each circle. Top each with tomatoes and cheese. Bake until golden , and the cheese is melted ( about 20 minutes)
Sprinkle with Basil.
