¾ lb Ground Beef
¼ lb Ground Pork
¾ cup Bread crumbs moistened in water, or 3 slices of bread in water, then squeeze out the water
2 Eggs
¼ cup Grated Romano Cheese
1 Tbsp Minced Parsley
1 Clove Minced Garlic
Salt and Pepper

Directions:

Mix all ingredients in a large bowl. Form into balls.

Heat olive oil in a large skillet and cook the meatballs over a medium flame until well browned on all sides.

Serve with sauce.

Mr. and Mrs. D'Ambrosio lived behind us in Elmhurst and they were like my Italian Grandparents. I thought I was Italian because of the them. These remind me of her.

~~~While researching Mr and Mrs D'Ambrosia (the name we grew up knowing them as), I discovered their name was actually D'Ambrosio (with an "o"). It's a small thing, but it rattled my world a bit. I found her naturalization petition, so that confirmed the spelling. I also saw she came to the US through NY on 5/27/1911 under the name Giudetta Mazzone. She married Raffaele D'Ambrosio in 1923 (her first husband died).

~~~I now know its D'Ambrosio, but I prefer to still pronounce it like I always have.
