1 Lb 93% Ground Beef
1 Lb Ground Bison
1 Lb Ground Pork or Ground Sausage
1 Lb Ground Chicken or Turkey
1 Medium Onion, finely chopped
2 - 3 Stalks Celery, finely chopped
6 cloves of garlic, chopped.
1 egg
2 tsp sage
1 tsp oregano
1 tsp thyme
2 tsp basil
1 tsp ground black pepper
(optional) 1/2 to 1 tsp dried mustard
1 cup dry uncooked oatmeal
1/4 cup ketchup
1/4 cup barbecue sauce

Preheat oven to 350º
Combine all ingredients in a large mixing bowl
Mix thoroughly (I mix by hand to ensure complete mixing)
Add additional oatmeal as required to obtain proper consistency (mixture should hold together well and not have significant wet areas)
Shape by hand into desired form (one large loaf or multiple smaller loaves of any size
Place in glass or metal baking dish
Do not pack into dish, leave room on all sides for drippings to run out of loaf
Bake in preheated oven until central temperature reaches 165º
(If cooking 1 large loaf, cooking time will be approx. 1 1/2 to 2 hours in a conventional oven, an individual serving will cook in 35 to 45 minutes)
Let large loaf stand for a few minutes and then slice.
Refrigerate leftovers, slice thinly and serve as sandwich with ketchup and mayonnaise)

This is my ultimate comfort food. Family recipe from when I was a kid and my mom made this. Using oatmeal instead of bread for filling gives it a great texture and taste.

I always make a large meatloaf so there are meatloaf sandwiches for lunch the next few days.

All of the ingredients are adjustable, use different types of meat, adjust seasonings as you desire. To a large extent, I use what is around my kitchen. If I have a little leftover tomato sauce, it goes in. Almost anything that sounds like it would be good in this recipe will undoubtedly be good.
