2 c. flour
4 tsp. baking powder
1 c. sugar
1/4 tsp. salt
1 c. milk
4 Tbs. melted oleo
2 c. cranberries.

Butter sauce
1 c. coffee cream
1/8 tsp. salt
2/3 c. sugar
4 Tbs. butter
1 Tbs. cornstarch

Bake in 9 x 9 pan for 30 minutes at 375 F.
Butter Sauce:
Scald cream. Mix sugar and cornstarch and salt. Add to cream. Stir and cook until thick. Add butter. serve on warm cake (pudding)

I found the recipe in an old Presbyterian cookbook from Stevens Point but the sauce was not included - interesting. It was a cookbook from near the turn of the century and in worn shape. I'm sure it came from Grandma Olin's home! Cranberries are grown in boggs near Stevens Point so perhaps that is why it was popular. We had it as dessert around the holidays but not usually on Thanksgiving or Christmas. Sue Keeran
Our family always has this as dessert for Christmas Eve...it wouldn't be the holidays without it. I often take it to pot lucks at that time of year and it's always a big hit. One of my friends here keeps begging for the recipe...but so far I have told her it is a "family secret." Jo Strasburg
