2 red onions, chopped
4 cloves garlic, chopped
1/4 c. olive oil
1/4 c. sugar
1/2 c. tomato puree
1 qt. vegetable stock
2 lbs. fresh tomatoes
1 t. salt
1 t. pepper
fresh basil

Directions:
Directions:
Sauté onions and garlic in oil a few minutes; add sugar and cook a few more minutes. Add tomato puree and vegetable stock. Quarter tomatoes and add to pot; add salt and pepper. Cook 1 hour on medium-low, stirring occasionally. Using processor or mixer, blend until smooth. Put back in pot; cook 30-40 minutes. Add basil when serving.

Kathy and I were cruising down the Danube River on a small ship, the Bizette. One day they served us this tomato soup. It was so delicious, I asked for the recipe. To my surprise, they gave it to me and even down-sized the recipe for a family of four.
