Crust

1 1/2 c. butter cookies crumbs
1/4 c. Butter, melted

In medium bowl, combine cookie crumbs and butter and then press into the bottom of a 9" cheesecake pan that has been greased. Then freeze while prepping the filling.
 

Filling

4 pkg (8oz) cream cheese softened.
1 1/2 c. sugar
2 eggs
2 egg yolks
1 T. key lime zest
1/4 c. Fresh Key lime juice
1 tsp. vanilla

Directions:
Directions:
Preheat oven 325 degrees.
In a large mixer bowl, beat cream cheese and sugar on med-high speed for 3 minutes.
Add eggs and yolks one at a time, beating after each.
Mix in lime zest, juice and vanilla.
Pour over frozen crust.
Bake for 45 - 55 minutes or until the top is light brown. Cool for 10 minutes (do not turn the ofven off).
The cake will sink slightly.
 

Topping

1/2 c. sour cream or greek yogurt
1/4 c. sugar
1 tsp Key lime zest
1 T. fresh Key lime juice
1/2 tsp. vanilla

Directions:

In a bowl, combine sour cream, sugar, lime zest, juice and vanilla. Pour into the center of the cooled cake and spread to edges.
Bake for 5 minutes.
Cool 2 hours then cover and refrigerate for 6 hours or overnight.
