Garlic-Curry Sauce

4 (6-8 ounce) boneless, skinless chicken breasts, trimmed, halved horizontally, and pounded to ¼ inch thick

2 large eggs
2 cups panko bread crumbs
½ cup vegetable oil
salt

Directions:

Place panko in large zipper-lock bag and lightly crush with rolling pin; transfer to shallow dish.
Whisk egg and 1 tsp salt in second shallow dish until well combined.

Working with one cutlet at a time, dredge cutlets in egg mixture, allowing excess to drip off, then coat all sides with panko, pressing gently so crumbs adhere. Set aside
Set wire rack over a rimmed baking sheet, and line rack with paper towels.

Heat ¼ cup vegetable oil, and a small pinch of panko in 12-inch skillet over medium-high heat. When panko has turned golden brown, place 4 cutlets in skillet. Cook, without moving cutlets, until bottoms are deep golden brown, 2-3 minutes. Using tongs, carefully flip cutlets and cook on second side until deep golden brown, 2-3 minutes. Transfer cutlets to prepared rack, and season with salt to taste. Wipe skillet clean with paper towels. Repeat with remaining 4 cutlets.
 

Garlic Curry Sauce

1/3 cup mayonaise
1/4 cup plain yogurt
2 Tbsp ketchup
2 tsp curry powder
1 tsp lemon juice
1/4 tsp minced garlic

Whisk all ingredients together in a bowl.
 

Pineapple Salsa

2 1/2 cup small chopped pineapple
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
1 jalapeno, seeded and chopped
1/4 cup chopped cilantro
1 Tbsp lime juice
pinch of sea salt

The cooked cutlets can be sliced into strips and served over rice with any sauce, or on a salad. Or served with a pineapple salsa. Or as a sandwich.
