3 cups flour
4 tsp. baking powder
1 1/2 cups white sugar
3/4 cup butter, softened
3 eggs
2 cups cantaloupe, puréed


Glaze:
1 1/4 cups powdered sugar
1/4 cup lemon juice

Directions:
Directions:
Preheat oven to 350ºF.
Combine flour and baking powder, set aside.
Cream together butter and sugar in a mixing bowl until fluffy.
While mixer is running add an egg at a time.
Add about a fourth of flour mixture, beat.
Alternate flour and purée until all mixed. Mix batter well.
Pour into a greased tube pan, or bundt pan is good.
Bake for 1 hour.
Mix powdered sugar and lemon together and pour over warm cake.
Let cool.
