1 cup sliced zucchinis
2 Tbsp. butter
6 eggs
2 Tbsp. water
1/2 tsp basil
1/2 tsp salt and dash of pepper
1/4 pound mozzarella cheese sliced

Directions:
Directions:
In 10" pan Sautee zucchinis in butter until slightly browned. Beat eggs, salt, pepper, water and basil until blended. Pour egg mixture over zucchinis and cook over medium low until partially set. Using spatula, lift frittata and allow liquid egg to flow underneath.
Add cheese and cook until eggs are set and cheese is melted.
