4-6 sweet potatoes, peeled and diced into 1 in. cubes
½ c. butter (1 stick)
1 c. Splenda brown sugar
¼ c. water
1 tsp. real Watkins vanilla
Dash or two of cinnamon

Directions:
Directions:
Preheat oven to 350º.

Peel, cube, and rinse sweet potatoes. Put potatoes in medium glass dish or baking pan. Set aside.

Glaze:

Melt butter. Add brown sugar, water, cinnamon and vanilla.

Cook on low heat for 5 minutes, stirring often, until ingredients combine and are heated through.

Pour glaze on top of sweet potatoes. Coat evenly and place in oven.

Bake, uncovered, for 1 to 1½ hours, until potatoes are fork tender.

Remove from oven and serve immediately.

I LOVE sweet potatoes and I wanted to find a way to make them delicious without adding a lot of granulated sugar. This became a big hit with my extended family. I actually converted a person that didn't like sweet potatoes to liking them after trying this recipe.
