1½ - 2 pounds rope sausage (any kind you like - I get pastured sausage from a local farmer), sliced
diagonally into ½ inch slices
1 Tablespoon Cajun seasoning (or to taste )
1 tsp. sea salt
4 Tbsp. butter
2 cups arborio rice
3½ cups stock or water
1½ cups bell peppers, diced
2 small summer squash, seeded and diced
2 cups scallion greens or onions (I don't tolerate onions so we use the greens)
Handful or two of leafy greens, any kind, chopped

1. Mix seasoning and salt . Sprinkle sausage with the seasoning mixture. Heat butter in open pressure
cooker on medium-high heat or in the Instant Pot on the saute feature. Add sausage; cook and stir 3
minutes or until browned. Add onions if using; cook and stir 3 minutes or until softened. Add broth and
bring to a boil.
2. Stir in rice, bell peppers, squash, greens, scallion greens. Close lid. Bring pressure cooker to full
pressure on high heat. Cook 5 minutes. Remove from heat. Let stand 5 minutes. Release pressure and
let sit 3 more minutes.
3. Remove lid. Stir and serve. Top with chopped cilantro and more cajun seasoning or hot sauce if desired.
4. Be careful because food out of a pressure cooker is quite hot
