1 c. butter
1/2 c. sugar
1/2 c. powdered sugar
1 egg
1 t. vanilla
2 1/4 c. flour
1 1/2 c. red and/or green
candied cherries, halved
1 T. flour
1 c. coarsely chopped pecans
3 c. coconut
Directions:
Directions:
Beat butter, sugars, egg and vanilla until creamy; add flour. Combine cherries and 1 T. flour; toss to coat. Stir cherries and pecans in by hand. Shape dough into 3 (10"x1½") rolls on plastic wrap. Roll each log in 1 c. coconut. Wrap tightly; refrigerate until firm (1 hour). Cut rolls in 1/4" slices; place 1" apart on cookie sheet. Bake 12-14 minutes at 350º until edges are very lightly browned.
