3 c. all-purpose flour
3½ tsp. baking powder
1 c. butter, softened (2 sticks)
1 ¾ c. granulated sugar
3 eggs
2 tsp. real Watkins vanilla
1 tsp. banana flavor
1 (3¾ oz.) banana pudding mix
1 c. milk
Baker’s Joy baking spray

Pudding:
1 (6 oz.) cook and serve vanilla pudding mix
1 (8 oz.) cream cheese, softened
1 (14 oz.) sweetened condensed milk
1 tsp. real Watkins vanilla
1 (8 oz.) Cool Whip topping
1 (11 oz.) box Nilla wafers

Preheat oven to 350º.

Prep two 8 in. round cake pans with Baker’s Joy spray. Set aside.

Cake:
Cream butter and sugar until light and fluffy. Slowly beat in eggs, one at a time. Add vanilla and banana flavors until well combined.

In a separate bowl, combine flour, baking powder and banana pudding mix. Add into wet ingredients, mixing until just combined. Don’t over mix!

Stir in milk until combined.

Divide batter into pans evenly and bake 22-25 minutes or until cake is golden and begins to pull away from sides of pans.

Allow cake layers to cool 10 minutes in pan. Loosen and remove from pan. Wrap in plastic wrap and freeze for 1 hour.

Pudding Mixture:
Make cook and serve pudding according to directions on box. Add vanilla after pudding is finished cooking. Set aside and let cool at least 30 minutes or longer.

Mix cream cheese and condensed milk together. Add pudding to cream cheese/condensed milk mixture and fold in Cool Whip.

Put mixture in refrigerator until ready to assemble.

Once cakes are frozen and pudding mixture has thickened, assemble cake.

Cake Assembly:
Place one cake layer on plate. Top cake layer with pudding mixture then add other cake layer on top. Add pudding mixture to top of cake and “frost” cake around sides. Add Nilla wafers all over cake and drizzle some of the pudding over entire cake and cookies with a spoon.

Keep cake in refrigerator until ready to serve.

**As always, it is best to let set overnight for best results.

The south is known for loving banana pudding. I'm from Mississippi, but I don't care for the bananas in the banana pudding dessert. So, I decided to make something different that included the banana flavor but not the actual bananas that are used to make banana pudding. This cake is very moist and if you like banana pudding, you will love this banana pudding cake!
