Easy Kraut Bierocks Recipe

Ingredients: 1 # lean ground beef 1 # gr sausage (like Jimmy Dean) 2# sauerkraut 1 large onion Salt and lots of Pepper 2-3 pkg. frozen Texas rolls dough ( Rhodes)

Directions:Thaw Rhodes bread dough rolls overnight in fridge or early morning. Don’t let them raise.
Next day: Chop onion finely. In large skillet, fry hamburger and sausage with chopped onion until browned. Drain if necessary. Drain sauerkraut and squeeze out as much liquid as possible. Add to meat mixture and mix well until hot throughout. Place mixture in cake pan and chill well.
Add parchment paper to 2 -3 large baking sheets or grease sheets with oil. On cutting board, flatten each ball into disks; 5-6 inch diameter- leaving a bit thicker in middle. Add 1/4 cup meat to each disk and draw up edges to form a bun. Flatten a little and cover to rise about an hour. Preheat oven to 350º Bake Bierocks 10 minutes and check. Bake 5-10 minutes longer if need be until browned. Brush with butter or olive oil. Serve immediately or cool and freeze. |

Notes: Ralph likes rolls with just sauerkraut, onions and sausage. Jeff likes cabbage, hamburger and onions with shredded cheese added. Also good with Italian sausage, onions, peppers and shredded mozzarella , Monterey Jack or provolone. Serve with marinara
