HAM BALLS:
3 1/2 lbs. ground ham
4 lbs. ground beef
6 c. GF bread or cracker crumbs
6 eggs
2 c. milk
1 c. ground onions
1 c. sauce

SAUCE:
3 c. brown sugar
2 1/2 c. water
1 1/3 c. vinegar
1/4 c. cornstarch
4 t. dry mustard

Directions:
SAUCE: Mix all in pot, boil 2 minutes. HAM BALLS Mix all. Scoop with a spring-loaded ice cream scoop into casserole dishes. Pour the rest of the sauce over them. Bake at 350º for 1 hour (160º - but meat will still be pink because of the ham). Makes 80-90 large ham balls. We usually make this size batch, then freeze some of them unbaked for later.
