Roasted Cauliflower Recipe

1 head cauliflower
Fresh thyme
2 bay leaves
4 cups vegetable or chicken stock - May need more or less depending on size of cauliflower
1/3 cup melted butter
Fresh cracked pepper

Directions:
Preheat oven to 400

Trim bottom of cauliflower and remove leaves and stem but don’t break the head apart. Rinse and pat dry.

Place whole head in a pot and cover with the stock. Add thyme and bay leaves. Bring to boil and let simmer for 12 minutes.

Saving some of the juices, drain, and transfer to a baking dish. Ladle a little of the juice over the head then drizzle the melted butter on top. Sprinkle some of the thyme and pepper on the head.

Roast in oven for 10-15 minutes until golden brown. Baste with cooking juice from time to time. Check with a knife, if it slides in easily, then it is ready. Keep an eye on it because it will burn fast. Remove from oven and sprinkle with a little more of the thyme and drizzle the buttery cooking juices from your oven pan.

You can use any seasonings you like.
