1 ¼ cup all purpose flour
1 cup oat flour
¼ cup finely ground peanuts
½ tsp baking soda
½ tsp salt
½ cup butter
1 cup dark brown sugar
1 tsp vanilla extract
1 large egg
½ cup dark chocolate chips
¼ cup nuts (optional)

Directions:

1. Toast oatmeal at 375 F for 15 minutes until lightly toasted and cool. Grind oatmeal with come all purpose flour until fine.
2. similarly, grind peanuts with flour until fine.
3. Set oven to 350 F and place parchment paper on cookie sheet.
4. Using an electric mixer, beat butter and brown sugar until just combined.
5. Add vanilla, egg, salt and mix.
6. Combine flour and oatmeal and place into mixer a little at a time until incorporated.
7. Using a wooden spatula, mix in the chocolate chips and let rest for 15 – 20 minutes.
8. Drop 1 tablespoon of dough onto to baking sheet bake for 12 - 15 minutes until sides of cookies turn golden brown.
9. Cool completely before storing.
