For Pie:
4 cups peaches, peeled and sliced
1/4 tsp. Cinnamon
1/2 cup sugar
1 tbsp. Cornstarch
1 tsp. Lemon juice

For Topping:
1 cup flour
1 1/2 tsp. Baking powder
1/2 tsp. Salt
3 tbsp. Shortening
1/2 cup milk

Directions:

Heat oven to 400*F.
Blend sugar, cinnamon and cornstarch in a large pot. Stir in peaches and lemon juice.
Cook on medium heat, stirring constantly until mixture thickens and boils. Stir and let boil for 1 minute. Pour into an ungreased 2-quart casserole dish. Keep fruit mixture hot in oven while preparing biscuit topping.

To make topping, mix dry ingredients in a bowl. Add shortening, and cut through shortening 6 times; add milk and mix until dough forms a ball. Drop dough by spoonfuls onto hot fruit.
Bake 25-30 minutes or until biscuit topping is golden brown.
Serve warm.
