1 bag frozen veggies- broccoli, carrots and cauliflower
1 can of mushrooms-drained
1 can cream corn
1 can corn niblets ("Our Compliments" brand peaches and cream is delicious!)
1 can of Campbell's Cream of Mushroom soup
1 c Swiss cheese-grated
24 Ritz crackers-crushed
1/2 c melted butter

Directions:
Cook the bag of frozen veggies for 5-7 minutes in microwave and drain. Place into a bowl. Add the can of drained mushrooms and gently mix. Then, add the can of creamed corn, drained corn niblets and cream of mushroom soup. Mix together. Add grated Swiss cheese then pour into a greased casserole dish. Mix the 24 Ritz crackers with the melted butter in a separate bowl or baggie. Sprinkle on top. Bake 325º to 350º for 25 minutes.
