Red Sauce (See Recipe)
Pancetta or Bacon - Cut into small pieces
Onion - Chopped
Garlic - Sliced Thin
Pecorino Romano
Eggs
Fresh Bread or Crostinis

Directions:

Pre-heat oven to 350º

Heat cast iron over medium heat. Add pancetta or bacon, cook until brown. Add onions and garlic, cook until translucent and fragrant, drain grease and return to heat.

Add sauce to skillet, mixing together until combined with pancetta onions and garlic. Sprinkle pecorino on top.

Make 3-4 small wells in the sauce, adding an egg to the center of each.

Place cast iron into pre-heated oven. Cook until eggs are done and cheese is browned.
