2 c. GF Flour Blend
2 1/2 t. baking powder
1/2 t. salt
1/4 t. xanthan gum (omit if GF flour already has it)
5 T. butter, melted
1/2 c. sugar
1 c. milk
1 egg
TOPPING:
2 T. butter, melted and cooled
1/4 c. sugar
1/3 c. coconut
1/4 c. nuts
1/2 c. chocolate chips

Directions:
Directions:
Mix dry; whisk in rest until smooth. Spread half in a greased 8x8 pan. Mix topping; sprinkle half over batter, then repeat layers. Bake at 350º for 25-30 minutes, or until it tests done with a toothpick. Broil for a couple minutes for a crispier top.
