2 cups all-purpose flour
1 cup sugar
2 tsp. baking powder
¼ tsp. salt
1/8 tsp. ground nutmeg
1 beaten egg
1 cup dairy or canned eggnog
½ cup butter, melted and cooled, slightly
1 tsp. vanilla
½ tsp. rum flavoring

Grease the bottom and ½ inch up the sides of a 9x5x3 inch loaf pan; set aside.

In a large bowl, stir together the flour, sugar, baking powder, salt, and nutmet. Make a well in the center; set bowl aside.

In a medium bowl, combine the egg, eggnog, butter, vanilla, and rum flavoring. Add egg mixture all at once to the flour mixture. Stir just until moistened (batter should be slightly lumpy).

Spoon batter into prepared pan. Bake in a 350 degree oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
