2# large shrimp, shelled and deveined
Marinade:
1/2 c olive oil
2 cloves crushed garlic (or more🤪)
1 t salt
1/4 c tequila
1/4 t cayenne pepper
1/2 c salsa

Mixed veggies, chef choice, I use red peppers, onions, mushrooms most often. Helps to have veggies of roughly same cook time, but dealer’s choice

Mix marinade, add shrimp, refrigerate 2-6 hours
Close to cooking time I roughly chop veggies, throw on a little olive oil, balsamic or red wine vinegar, salt. Toss together
Oil grill
I use grill pan, cook shrimp 2-3 minutes per side, veggies til tender/crisp. My grill is small so I do shrimp first, then veggies. You can also do this as skewers/kabobs, but I find grill pan quicker, easier and less messy. I serve over Vigo yellow rice. Sometimes I top with a splash of sriracha. This is a favorite of mine
