1 cup brown sugar
1 ¼ cups rolled oats
2 cups flour
½ Tablespoon baking soda
½ teaspoon baking powder
½ teaspoon salt
¾ teaspoon ground cinnamon
1/8 cup canola oil
1/3 cup apple sauce
1 Tablespoon water
1 egg
¾ teaspoon vanilla
1/3 cup dried fruit
1/3 cup chopped nuts

Directions:

Preheat oven to 350 degrees. Grease cookie sheets.

Stir together the sugar, oats, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and pour in the canola oil, apple sauce, water, egg and vanilla. Mix until well blended. Stir in the dried fruit and nuts. Roll into golf ball sized balls. Place cookies 2 inches apart onto the prepared cookie sheets and flatten to ½ inch tall with wet hands. These cookies do not flatten very much while baking.

Bake 8 minutes for chewy cookies, 10 to 12 minutes for dry cookies. Remove from cookie sheets to cool on wire racks.

(The original recipe called for prune puree. I use apple sauce and it works well. Mashed banana might also work. I also have substituted oat flour for half the amount of flour, or whole wheat flour for 1/3 the amount of flour. The original recipe called for raisins and dried apricots, but I have substituted dried cherries and cranberries.)
