1 head romaine lettuce, chopped
4 tomatoes, cut into 6 wedges each, then each wedge cut in half
1 cucumber, peeled, cut into fourths lengthwise, and diced into large chunks
1 small red onion, sliced very thin
1 small jar pitted kalamata olives (mash up 6 olives - set aside)
6 oz crumbled feta cheese
1/2 c olive oil
4 tbsp red wine vinegar (or any vinegar you like)
1 tsp stevia, or more to taste (or sugar)
1 clove garlic, minced
1 whole lemon, for squeezing
Fresh parsley leaves, roughly chopped and Salt and freshly ground black pepper

Directions:

Add lettuce, tomatoes, cucumbers, onion, olives, half the feta and parsley to a large bowl.
Combine the olive oil, vinegar, stevia, garlic, salt, pepper and smashed olives in a bowl or mason jar. Whisk or shake together until combined.
Pour the dressing over the salad ingredients, then add some salt and pepper. Toss with tongs or clean hands. Just before serving, top with the remaining feta and squeeze a little lemon juice over the top.
Add 3 grilled chicken breasts for a dinner meal
