2 or 3 lbs Pork meat, cut into small cubes
Fry (in a large frying pan or Dutch Oven) in about 1/3 cup Oil

While it’s frying, in another frying pan:
Peel and cube about 3 or 4 medium potatoes.
Just fry til done, but not mushy.
When done just put to the side.

When Pork meat is fried, make chili:

Put 3 1/2 large Tblsp of flour. (Or Gluten Free Flour)
3 1/2 Tblsp Red Powdered Chili (Fernandez brand) ( or anything similar)
Mix... Let it bloom til you get right smell. And flour is cooked.

Add Water until you get chili gravy . But not thick. You want it medium thick.
Add 3 lg rinds of an Orange.Trust me... it will make it taste so good!
Add Fried potatoes.

Spice up your chili with Salt, garlic powder, and Cumin.

Let it simmer for about half an hour. Add more water to it as needed.

Simmer...
Before serving, remove the Orange Rinds.

Serve with white Tortillas

If you are Gluten intolerant, use gluten free flour.

This is so good!!

I learned in Mexico to add the Orange rinds.
It gives it a good flavor,.
If you find you don’t like it... leave it out.
But I think it gives a taste that others will say.... Hmmmm!!
