2-3 chicken breasts or thighs
1/8 c. toasted sesame oil (buy in the oriental food section)
1/8 c. rice vinegar
garlic paste
ginger paste
soy sauce
1/2 onion
2-3 carrots
1-2 stalks celery
2 stalks broccoli
Any of the following, to your taste:
cabbage, bell pepper, cauliflower, peapods, water chestnuts, mushrooms, bean sprouts, garlic pods, bamboo shoots, etc.
1 c. chicken broth
peanut oil for frying

Cut chicken into bite size pieces and marinate for 15 minutes in sesame oil, rice vinegar, big squeeze of garlic paste, big squeeze of ginger paste, and a splash of soy sauce. IMPORTANT: Before doing anything else, chop all your vegetables into bite size pieces. Keep the vegetables sorted in separate piles. You need a total of about 4-5 cups of vegetables. Pour peanut oil in a Wok or deep frying pan and heat on high until a drop of water sizzles when sprinkled in. Carefully add chicken to the hot oil and stir a few minutes until done. Be careful as oil can splatter. (you may need to remove Wok from burner when you add the meat, then place back on the burner.) Add onion and cook until tender. Push meat and onions to the side, then add carrots. Reduce heat if needed. Stir a minute or two, then add celery, stir a few minutes, add broccoli last and cook until it is just bright green. If you have other vegetables, cook the denser ones with the celery and carrots, then the less dense or already cooked ones with the broccoli. Cook only until the vegetables are crisp/tender. If the mixture gets too dry or starts sticking to the pan, add chicken broth. Serve immediately over rice. Garnish with chopped green onions. Serve with soy sauce on the side.

I prefer chicken thighs, but you can use pork, beef, shrimp or a combination. Add shrimp at the end as it cooks really fast. You can also use leftover cooked meat; add last just long enough to warm up. Omit the meat for a delicious vegetarian meal. Experiment & find the combination you like best!
