2 c. all purpose flour
2 1/4 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/3 c. plus 2 tbsp. shortening
3/4 c. thick buttermilk

Directions:
Directions:
1. Sift flour, measure, re-sift 3 times with next 3 ingredients, the third time into mixing bowl.
2. Cut in shortening with a pastry blender or 2 knives.
3. Add buttermilk all at once, then with a fork stir briskly to thoroughly mix.
4. Turn onto lightly floured board, pastry cloth or wax paper.
5. Knead 8 or 10 times.
6. Roll or pat from 1/2 to 3/4 inch thick.
7. Cut with floured cutter ( or drinking glass), place on greased shallow pan.
8. Brush tops with cream or milk, optional.
9. Bake in hot oven (450 to 500 F) 10 to 15 minutes.
10. Serve piping hot.
