6 - 8 slices of bacon
1 medium onion
1-2 heads green or red leaf lettuce ( or a dish pan full from garden)
1/4 cup sugar
1/4 cup cider vinegar
S&P to taste

Directions:
Directions:
Wash and spin dry lettuce. Tear lettuce into pieces and place in large bowl.
Chop bacon pieces and onion.
In skillet, fry bacon and onion until crisp. Scoop out onion and bacon onto a paper towel with a slotted spoon.
Reheat bacon grease (scant 1/4 cup), adding sugar and vinegar. Turn up heat and stir until sugar dissolves. While hot, pour dressing over lettuce and use tongs to disburse dressing and wilt lettuce. Add in bacon, onion and salt and pepper and serve immediately.
Again- these amounts are a guess. Carpenter's just fried bacon and onion- drained a bit of grease off and added whatever amounts of vinegar and sugar they liked before heating and pouring over garden lettuce or spinach!
