Carpenter Potato Salad Recipe

Ingredients: 8 - 12 medium potatoes ( 8+ cups) 8-9 eggs (2½ - 3 cups) 1½ cups finely chopped celery with leaves 1½ - 2 cups finely chopped onions ( 1 large)
1&1/4 cups Hellman's mayonnaise 1/8 cup cider vinegar 1/8 - 1/4 cup sugar 1 tsp. salt Pepper to taste

Directions:Boil potatoes with skins on. Drain and chill. Hard cook eggs. Chill.
When cold, peel and cube potatoes into a large bowl. (should make at least 8 cups.) Peel and chop chilled hard cooked eggs and mix into potatoes. Mix in the chopped celery and onion.
In small bowl whisk 1 cup mayo with 1/8 cup vinegar and 1/8 cup sugar, salt and pepper. If sauce is too thin add rest of mayo. Taste and adjust sugar and salt. We like it sweeter so we add more sugar. Mix sauce gently into potato salad. It may look somewhat wet depending on kind of potatoes but as it chills it will absorb some of the sauce.
Mom never had a recipe so this is my attempt at working out measurements- but they are not exact and it doesn't always turn out the same each time! |
