4 cups frozen shredded hash browns
1 1/2 cups shredded cheese (cheddar of Jack)
1 1/2 cups meat of your choice
8 eggs
1 (12 oz) can evaporated milk
1/3 cup chopped green onions (can saute onions and peppers or even add 1 can green chilies)
salt and pepper to taste

Directions:
Directions:
Put frozen hashbrowns in a 9x13 baking pan. Cover with cheese and follow with meat. Sprinkle with green onions (or sauted veggies).

Beat eggs and milk together and pour over the other ingredients. Season to taste. Cover and refrigerate overnight.

Bake at 350 degrees for 55-60 minutes.
