1 head Boston (butter) lettuce or Baby Romaine 1-2 stalks - washed & torn
2 ripe Bartlett pears - halved, cored & sliced
2 T. pistachio nuts - toasted & chopped
cup skim ricotta cheese

Dressing:
cup orange juice (freshly squeezed)
1 T. balsamic vinegar
1 tsp. honey
2 tsp. walnut or avocado oil

Directions:
Directions:
Arrange lettuce equally on four plates.

Top with equal amounts slicked pears.

Sprinkle tsp nuts over each salad.

Dollop 1 T. ricotta cheese in the center of each salad.

Whisk together dressing ingredients

Drizzle over each salad and serve.
