1 diced onion
3 minced garlic cloves

Directions:
Directions:
Saute onion and garlic and add leftover shredded roast beef. Stir to combine and add the remaining ingredients.

The additions to the filling can be whatever you might find leftover in the frig -- such as El Pato sauce, salsa, green chiles, etc

Taste will tell you what is needed - I like it to be rather firm

Place about 2 Tablespoons of the beef mixture on a flour tortilla and roll up. Brush with melted butter.

Set the airfryer to preheat -- set at 400 and when ready, fry the chimis seam side down for 4 minutes -- turn over and fry for 2 - 3 minutes longer .- or until desired crispiness --

Serve over a bed of shredded lettuce and dress it up as desired.
