Equal amounts of:

Green Olives Drained, reserving some liquid for dressing (use mixed Italian and Greek) I like some with pimento

Sliced celery (not to small)

Slices Carrots (Not to small)

1 red pepper diced (optional)

Very finely sliced red onion (optional)

For Dressing:

Good Olive oil

Good wine vinegar

Reserved liquid from green olives

salt and pepper to taste

minced garlic to taste

Plenty of Italian seasoning or just oregano

Minced basil and/or Fresh parsley ( optional)

Mix all together. Marinate overnight.
