½ c rice vinegar
¾ c water
½ c + 2 T white sugar
5 garlic cloves smashed then chopped finely
1 T soy sauce
2 ½ T sambal olek chili sauce
4 tsp cornstarch
2 T water
½ tsp cayenne pepper (optional if you like extra spicy)

Combine vinegar, sugar garlic, soy sauce and cayenne pepper (if using) in a non-stick saucepan. Heat over medium heat while stirring to dissolve the sugar. Increase heat to med-high and bring to a boil. Let simmer for about 2 minutes.

Add the samba olek and mix through. Let cook until slightly thickened, about 2-5 minutes.

In a cup or bowl, mix the cornstarch and water and stir into a smooth slurry. Add this to the sauce.

While stirring frequently, summer the sauce for another 2-5 minutes or until it reaches your desired thickness. The sauce thickens as it cools as well, so cook until a little thinner than you want the final sauce to be. If it ends up thickening too much, you can add a little water to thin it back out.
