2-3 c. mashed sweet potato (baked or boiled)
3 eggs
1/2 c. sugar
1 can evaporated milk
1 t. vanilla
1 unbaked pie crust

Mix all until smooth. Pour into pie crust. Bake at 350º for 45-60 minutes, or until set.
