1 pkg. rapid rise yeast (2¼ tsp.)
1½ tsp. salt
2½ c. bread or all-purpose flour
½ c. Semolina flour
1½ T. white sugar
1¼ c. warm water
2 T. softened butter


NOTE: All all-purpose or bread flour may be used if you can't find semolina

Combine flours, yeast, and salt in a large bowl. Heat water and butter in a small bowl just enough to melt the butter (about 30 seconds in the microwave).
Put sugar in the bowl of a stand mixer fitted with the paddle attachment. Add water mixture and stir to dissolve the sugar. Add half the flour mixture and mix on low to combine. Add remaining flour mixture and mix until dough has pulled together. Switch to dough hook and mix until smooth and elastic, about 8 to10 minutes.

Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth or plastic wrap and let rise in a warm place until doubled in volume, about 1 hour.

Deflate the dough and turn onto a lightly floured surface. Form into a loaf shape and place into a lightly greased 9x5 inch loaf pan. Cover again and let rise until doubled in volume, about 40 minutes.

Preheat oven to 425º. When dough is ready place the loaf in the oven and lower the temperature to 375º. Bake for about 30 minutes or until the top is golden brown. Remove to a wire rack to cool before slicing.

Using Semolina flour gives the loaf a velvety texture and a wonderful flavor, but it's better than any store-bought white bread no matter what flour you use, and using whole grain white flour makes it healthier.
