1 banana, mashed
1/2 cup brown sugar, firmly packed
1/2 cup milk
1 teaspoon vanilla
1 egg
3 slices white bread, cut into 1" pieces
1/4 cup raisins

Directions:
Directions:
Preheat oven to 350º. Spray shallow 3-4 cup baking dish with nonstick cooking spray. In medium bowl, beat together banana, brown sugar, milk, vanilla and egg. Line baking dish with half the bread pieces. Sprinkle with raisins. Place remaining bread over raisins, top with egg mixture. Press bread gently to evenly moisten.

Bake 30-40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes.

"Great for maturing bananas, milk or using those bread ends no one wants on their sandwiches. Recommend doubling recipe and assembling in a 6-7 cup glass storage container with a cover. Most people want more servings."
