2.5 cups almond flour
1 cup + 2 tbsp. cocoa butter, grated
1/2 tsp. vanilla extract
1/4 tsp. salt
1/4 tsp. baking soda
1/2 cup honey

Directions:
Directions:
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.

Combine almond flour, salt, baking soda and grated cocoa butter in a bowl. Stir together. Add the honey and mix. The mixture will appear dry and crumbly.

Place the bowl in the microwave and microwave for 45 seconds at half power. Mix the dough, microwave for 15-30 seconds longer until the cocoa butter is melted. Finish mixing completely.

Form tablespoon size balls of dough and place on cookie sheet. Lightly flatten the cookie balls.

Bake 350 for 8 minutes to 10 minutes.

Cool and enjoy!
